Chicken satay with peanut sauce

- In a bowl, mix the chicken, curry powder, red curry paste, coconut milk, and honey. Add the chicken and mix well. Cover and marinate in the refrigerator for at least 20 minutes, or up to 24 hours.
- Preheat a skillet over medium-high heat. *If you're making this recipe on the BBQ, be sure to brush, clean, and oil the grates well.
- Thread the chicken strips onto the skewers. Season with salt and pepper to taste. Grill for 3 to 5 minutes, or until the chicken is nicely browned. Turn the skewers to the other side and cook for an additional 2 to 4 minutes, or until the chicken is cooked through. Set aside.
- In the meantime, warm the Sésame peanut sauce in a small saucepan over low heat.
- Serve the chicken skewers with the Sésame peanut sauce and lime wedges. Garnish with cilantro, peanuts, and chili. Serve immediately.
