INGREDIENTS

Pad thai

⭘ 180 g (6 oz) of medium rice noodles, cooked (al dente) and cooled*
⭘ 45 ml (3 tbsp) of vegetable oil
⭘ 227 g (1/2 lb) of boneless, skinless chicken thighs, cut into strips
⭘ 1 garlic clove, peeled and minced
⭘ 1 shallot, thinly sliced
⭘ 10 ml (2 tsp) of shrimp paste
⭘ ½ bottle of Sésame pad Thai sauce
⭘ 2 eggs, beaten
Garnishes

⭘ A few green onion stalks
⭘ 500 ml (2 cups) of bean sprouts, divided
⭘ 60 ml (1/4 cup) of unsalted peanuts, crushed
⭘ Fresh cilantro, to taste
⭘ Limes, cut into wedges

Preparation steps

  1. In a wok, heat 30 ml (2 tablespoons) of oil over high heat. Add the chicken strips and sauté for 1 to 2 minutes, or until the chicken is cooked. Season with salt and pepper and set aside.
  2. Return the wok to the heat and heat 15 ml (1 tablespoon) of oil over high heat. Sauté the garlic and shallot for 20 seconds, stirring frequently. Add the shrimp paste and cook for 20 seconds.
  3. Add the cooked rice noodles, Sésame pad thai sauce, and chicken. Cook for 1 minute, stirring frequently to coat the noodles well with the sauce.
  4. Make a nest in the center of the wok and crack the eggs into it. Mix well.
  5. Add half of the bean sprouts and half of the peanuts. Mix well. Remove from heat.
  6. Divide the pad thai between 2 plates. Top with the remaining peanuts and bean sprouts, and garnish with green onions and cilantro, and serve with lime. Serve immediately.

Notes:

A good pad thai can be made in less than 5 minutes of cooking. The key to success is to prepare all the ingredients in advance and cook everything over very high heat.
Chicken can be replaced with tofu, beef, pork, or shrimp.
